In observance of Spring Break you guys an extra boozy post this week! Today we are going to decode my famous Boozy Blackberry Ice Cream, which isn’t really ice cream at all. As you know we are pretty much dairy-free so we enjoy using Silk Coconut Ice Cream as a substitute, but feel free to use any pint of your favorite vanilla ice cream for this recipe.
The recipe itself is super easy and perfect for those warm summer nights when you are craving something bright and delicious. Serve it at your next adult get-together for an unexpected dessert.
- 1 Cup Blackberries
- 1/4 Cup Blueberries
- 1 Pint Vanilla Ice Cream;We love Silk Coconut
- 2 Shots Rum; Or your favorite liquor
- Take ice cream out to soften for 10 minutes.
- Blend blackberries & blueberries in blender.
- Stir in berries and rum into softened ice cream
- Put back into pint and let freeze for 1 hour.
- Enjoy!

Oh my god. This is so simple! I definitely need to try this. I’ve seen a lot of Popsicle that are infused but those are a lot more work/I don’t have a Popsicle mold!

It looks soooo pretty I don’t think I’d ever eat it. Haha! From a tropical country tho, so blackberries and blueberries aren’t so common. Would dragonfruit be a good subsitute? 🙂
Black berry ice cream sounds like a good idea!!! Ice cream is one of my comfort food. Probably because it’s very hot in the Philippines. But I don’t think I’ll make it as good as you do.
I will simply admire and imagine how it tastes. I am not a big fan of ice cream although I indulge every once in a while and when I do, I take my sweet time, not too long to allow for melting though.

My boys and i so love ice cream very much and we would put anything on it. We also make our own ice cream and its just so fun. Your recipe is worth trying., its just that berries arent easily available in some groceries.
