Can you believe January is almost over? I am determined to make the most out of the last week of January and I am sharing with you fine folks some of my favorite ways to do just that. As a mother of two that owns her own business, runs a full-time blog and works at several other jobs if I can find a shortcut with cooking I take it. Crockpots are my friend, especially during the times when I have meetings up until I pick my child up from school. Usually those days I really don’t want to slave over the stove for another hour or two once we get home, so I have found a super cheesy, filling and delicious soup recipe that is sure to please everyone and save some time for us parents.
This recipe comes to life in the crockpot while you are working away. I love the variety of cheeses and I’ve found that even my child that doesn’t love broccoli still enjoys this soup. You can serve with croutons, crackers or a hot sandwich if you would like.
Cheesy Crockpot Broccoli Soup
- 2 c. cooked noodles
- 1 (10 oz.) pkg. frozen chopped broccoli,thawed
- 3 tbsp. chopped onions
- 2 tbsp. butter
- 1 tbsp. flour
- 2 cups shredded cheddar cheese
- 1 1/2 cup Velveeta cheese
- Salt to taste
- 5 1/2 c. milk
Combine all ingredients in slow cooker. Stir well. Cook on low for 4 hours. 8 servings.
